CARROT OIL CAKE

> Have all ingredients about 70°.
One 8-Inch Square Pan
Preheat oven to 325°.

Sift before measuring:
1 cup all-purpose flour

Resift with:
1 teaspoon baking soda
1 teaspoon double-acting baking powder
1 teaspoon cinnamon
½ teaspoon salt

Mix together and add to flour, stirring well:
⅔ cup vegetable oil
1 cup sugar
2 beaten eggs
Add and blend in well:
½ cup chopped nuts
1½ cups grated carrots
Bake in a greased and floured pan about 1 hour and 25 minutes.

BACON MUFFINS

2 slices bacon
2 tablespoons sugar
2 cups all-purpose flour
1 egg, beaten
½ teaspoon salt
1 cup milk or ⅓ cup evaporated milk and ⅔ cup water
3 teaspoons tartrate or calcium-phosphate baking powder, or
2¼ teaspoons S.A.S.-phosphate baking powder
2 tablespoons melted bacon drippings

Chop bacon and pan-broil until done; drain thoroughly. Sift flour, measure, and resift twice with salt, baking powder and sugar; add crisp bacon and stir until well distributed. Beat egg and combine with milk, water and melted fat; add to dry ingredients all at once, and stir quickly until they are just dampened; then give 3 or 4 more stirs. Do not stir until smooth. Dip into greased muffin tins, filling them ⅔ full. Bake in a hot oven (425° F.) for 20 minutes, or until nicely browned. Serve piping hot with butter. Makes about 12 medium-sized muffins.
