Not 11ty. My site is in Astro. But similar concept.
In the past I’ve used Netify CMS which has a simple web interface.
Currently I’m using Headless Wordpress.
I’ve also given sanity.io a try, but that felt like it had a bigger learning curve around content architecture

Multiple authors should be feasible, have not looked at that myself. You can use and define your own tags perfectly. You can put as many tags in your content files as you want and even create collections with conditionals like "pick from X AND Y tags"

Yes, in very rough terms: when you make a 11ty site you make templates (html files with "fill this blank" spaces") and the content to be filled as markdown files and tagged to what template they should fill. 1tty merge things together to make the site.

Yeah, 11ty is really nice. I have been using it to build my own site and it gives you a lot of options. I would say it is so unopinionated in how you make your site you may feel lost at times without structure. But the base-blog template is perfect for most people, so not much of an issue.
